I don't know what you mean 'I'm not on live payroll'. If you can send the payroll file or do banking from your computer at work, you can send it/do it from your work computer via a LogMeIn session.
Think of it like this - imagine you could just transport your work computer to Bali and do whatever you normally do on it, except you are in Bali. That's what you will be able to do, and with a session that is as secure as doing internet banking.
There are security risks using the hotel's wireless internet, it will not be secure, so it is possible that someone may listen into your session and get the password to your computer. Your company has to weigh up the risks. If your boss has a problem with that, then I suggest you put the problem back on him/her to work out how the pays will be done while you are on holiday (e.g. train someone else, outsource the payroll). Really, the onus is on them to organise this. You are entitled by law to a holiday.
Payroll outsourcing is pretty popular with a lot of companies for good reason.
