There is more than one restaurant at Echo Beach but the service is excellent, and pricing is much more reasonable than that at Jimbaran, with the added advantage of receiving the correct amount of food paid for. No dodgy scales. ( No pun intended ).
You will only need a 7 day visa provided that you clear immigration prior to midnight on the Monday after your Tuesday arrival. When you leave, your passport will be stamped with the date you pass through immigration thereby acknowledging that you have effectively left Indonesia on the Monday. (As per your passport.)
I cannot help with your question re KTH as I have never stayed at this establishment.
