The late and much lamented Filo, who was quite old, stayed at Adi Cottages in the middle of Monkey Forest Rd. I stay there too as it's very convenient - lots of things within an easy walk. Small rooms & a bit overpriced but central & great staff.
No taxis in Ubud so you have to negotiate with drivers (use the ones wearing Batik shirts). Plenty of hotels away from the central area do free drop offs & pick ups, as do restaurants. Your Mum might enjoy the art galleries (especially Neka, almost opposite Tropical Bale restaurant) and the nightly dances - different ones at different locations every evening - get a list from the Tourist Office. There are several delightful walks of varying ease/difficulty through rice fields.
Ubud is a convenient base for many day & half day trips (eg to Lovina) & you don't have to endure the horrid traffic which travelling from & to Kuta, Legian etc entails. Perhaps you could do the Bike Baik trip & your Mum could travel in the support vehicle (as I will be doing as I have never ridden a bike).
