Instead of leaving your child in the hotel with a babysitter, consider hiring a Balinese teenager or woman to meet you at your hotel in the morning & accompany you throughout the day - &/or throughout your trip. You'd know your child is being well cared for. For the bike ride the pembantu could travel in the support vehicle with your baby. You would of course have to pay for her accommodation & food on top of her daily rate & other costs.
When I was there with my 4 month baby we stayed in a house with a Balinese maid who had children - learned a lot from her. The Balinese live in extended families & are very cluey, especially re: food - I wanted to give my baby mashed bananas that were not suitable - only certain bananas are OK for infants. As I was breast feeding she insisted that I not eat chillies or garlic or pineapple. Even the local warungs & restaurants censored my food choices - but I digress.
As others have said, I definitely would not leave my child alone with a stranger(here or in Bali).
