You can book in private villas to my knowledge as far in advance as you like and just pay a deposit until closer till your trip.
Someone like balivilla.com.au will allow you to book and they'll be able to tell you their price for next year now I'm certain of it
Booked ages ago for April next year, wasnt an issue.
