If it's the high season I would grab the seats when they become available as in my experience they are not going to get any cheaper. The cheap seats go first and they only get dearer.
However, if it's not high season (Public and school holidays) I'd sit and watch the flight prices. I would log in daily on all your preferred airline sites and pounce like a hawk... by which time you will KNOW when a good price comes along.
