After many trips to Bali, we went to Gunung Kawi near Ubud this year and were blown away. We have been to Angkor Wat in Cambodia and found this to be just as amazing. Just beware the 300 odd steps up and down! We also enjoyed Besakih the mother temple.
If you want a good day trip you could go to the east through Candi Dasa to Tirta Gangga the Royal Pools and Taman Ujung the Water temple. These are both beautiful places. If you have time you could also go to Amed and snorkle off the beach (which is a rock beach instead of sand).
Lastly the best thing we have done in Bali is a bike ride down from Kintamani to Ubud with Bali Baik tours. They pick you up and you go through a coffee plantation for breakfast coffee, then have breaky looking over the volcano, then you ride down the mountain to Wayan's family compound where his wife has cooked traditional food. You go through local villages and all the children come out and wave and cheer. They have a website. The ride is easy and they have a car that follows if you get too tired, but my 6 and 8 year old did it and so did my very unfit self!
All the advice to have rest days inbetween tours is probably the best advice of all, don't forget to chill out.
