We went NSW July School holidays this year and booked in October. I'm pretty sure you can only book flights 11 months in advance so start looking on Jetstar/Pacific Blue websites at beginning of September for the dates you are after. We flew Garuda this year as Jetstar worked out to be around $600 more for a family of 4 for the dates we wanted. I booked through Nicki Lawson, although I think you can call Garuda direct in Sydney (#'s in the white pages).
