i would take one. that way you know you have the essentials when you need them. your list looks good to me.
i also have a nailbrush and some washing powder so i can wash my own smalls.
for the rest: if you enjoy shopping, you can buy most stuff, but when i am on holiday, it is a holiday from shopping. the advice given about sunscreen and sanitary goods is excellent. we take one medium size backpack for the four of us, and three daypacks. nothing is full to the brim as we like to move around the island.
in it goes 2 changes of easily dried clohes for each of us, plus one set of cool weather clothing. we each have one pair of shoes, plus reef shoes for coral, hot beaches etc. lots of sunscreen and even more books take up most of the rest of the backpack. 2 pairs of bathers each, as they degenerate quickly in bali.also goggles to counter the chlorine and for snorkelling.
as carry on: i have a pair of bathers each, the goggles,100ml of sunscreen, sunglasses, hats, books,food , a complete change of clothes for each person. toiletries and medications to last a few days, in case we lose our luggage. a folder with phone numbers/contact details etc, waterbottles for the immigration queue.
