The accommodation in Mataram is not really targetted at Westerners. There are lots of small hotels catering to Indonesian and Malaysians. Facilities are basic and the bathrooms are Indonesian style toilets and Mandi. There are a couple of nicer hotels like the Grand Legi, but they are a bit more than $50 per night.
Westerners on business often stay at the Jayakarta, which is just outside of Mataram/Ampenan on the way to Senggigi. You should be able to get a room there for around AUD50.
You would have a wider choice if you stayed more toward Senggigi.
