With such an abundance of rice, and little wheat crops, the Balinese use rice flour mainly for their bread making.
You can take a printout of the following (which I have copied from another post) and show it at restaurants.
My niece is a Coeliac and stayed at Club Med, Nusa Dua last month and the chef made special point of preparing gourmet meals to suit her intolerance. Ange was spoiled and the chef came in on his day off to make sure she was fed well.
Also do a search of the archives, using gluten, there is heaps of info.
