If you're only going up for the day, I would leave Kuta quite early to squeeze as much in as you can.
On the way up (or back) you could stop at the market town of Sukawati or the craft villages of Celuk (silver), Mas (woodcarving), Batubulan (stone) or Batuan (painting).
It might take you a couple of hours to get up there if you stopped at one or two of these places.
Once you get to Ubud, I would go straight to the main market for an hour or so, stop for a nice lunch somewhere, then walk down Monkey Forest Road doing a bit of window shopping past the boutiques/shops, finishing up at the Monkey Forest down the bottom where you can feed/take photos of the cheeky macaques in a lovely forest setting.
I doubt you would have the time or strength to do anything after that.
