We also went to Lembongan with Bali Hai, just for the day. We had the option of staying on the pontoon & going snorkelling from there & using pontoon slides etc or going on to the island where we could use Hai Tide huts facilities (pool, gardens etc.). As we had a little one with us we decided on the island, (safer) but if we were to return without kids we'd still make the same choice. Snorkelling from the beach was beautiful, & we still had the option of taking the short boat ride back to the pontoon & snorkelling from there (we didn't do this but heard it was awesome).
There's a big fresh buffet lunch included, free banana boat rides & various activities. You can pay a little extra for parasailing & jetskiing. It was such a relaxing day for us, if it's affordable i'd say give the Hai Tide Huts a go for overnight as our only complaint was we didn't get to stay long enough. :)
