So hard to pick just one favourite! I'm a fan of the veggie and tempeh dishes, especially the tempeh goreng sambal with the little fried fish, chilli, and peanuts mixed in.
Love sambals of all kinds, including ones made from eggplant (tuwang) and the little rice sawah eels. My alltime favourite, because it's unusual to find it, is the sambal bonkot. It's a sambal similar in style to the matah in that it's not cooked, but the main ingredient is the torch ginger flower which makes for a crunchy and sprightly sambal. Great with fish and tempeh dishes.
But aside from all the sambals, the dish I like the best that you can get in most warungs is a simple urap. The wonderful green/veggie dish mixed with sambal, fried shallots, kaffir lime and coconut. It's a little different everywhere you go but is the dish I crave the most when I'm not in Bali.
