My advice would be to change your money in bali and one of the better places will be pt central kuta which operates mainly from kodak photo shops but be aware not all kodak shops are pt central kuta.
If you have negotiated a price for the hotel make sure that your receipt shows total price,in rupiah, and also shows how much deposit you have paid and most important,how much the balance is.
If you have the money to pay for everything now lock it away in a bank account and you wont have to be running around trying to come up with it later,just withdraw shortly before going and change in bali.
