Nusa Dua is great. There are many excellent 4-5 star places to stay ... try the Melia Bali, it hasn't been mentioned. Don't just rely on this forum for information look at the reviews on tripadvisor dot com for accom etc.,and you will see that there is a lot of things to like about the Nusa Dua area.
For shopping/eating there is a large shopping mall (Bali Collections) right next door to the Melia including the Japanese department store Sogo, specialty shops and a number of mid priced restaurants. Just outside the main gates (both North and South) you will find Bualu Village which has shopping and restaurants equally priced to Kuta, although the majority of restaurants are at the southern end. Kuta itself is about 15-20 minutes away by cab if you need to get there??
Benoa too has some great restaurants just a short cab ride away but in Nusa Dua you can walk to Bualu by foot!
