I haven't been to the other 2 so I can't comment on them.
Using Ubud as a base for those days is the best decision you have ever made. It will cut down travel time by 1 hour EACH way to Safari and elephants. May I suggest you do birds & reptiles on the way to or from Ubud as you will probably be driving past them anyway. This should cut down on the "Are we there yet?"
3 (I'd do 2) places in 14 days is ok , but don't try to squeeze in anymore. Packing up, checking out, travelling, checking in, unpacking takes a big chunk out of a day that could be spent holidaying. And with little ones around, even more time consuming.
