Yes diving can be done. My husband had never been on a dive before either. After the initial panic passed he enjoyed it very much.

My husband and i have both been on the Bali Hai 3 Island cruise and loved it. I think either one of your suggested activities, diving or 3 island tour' would be a memorable way to spend your last day in Bali
Your first day looks busy yet at the same time it'll probably be a relaxing day. If you find yourself spending more time than you planned enjoying one spot you can always just omit a place or two from the plans. Catch up with that spot the next time you're in Bali :)
Day 2 3 and 4 look fine to me.
