You can do heaps in three weeks. My first trip (1995), we did a a few days everywhere, including Lombok, so it was more adventure tour than relaxing holiday, and without children, but at least I had a look around which made it easy to plan the next trip, and the next, and the next!
Choosing how long at each place depends on what you want to get out of it. But do consider reserving the last day or two for a stay in Tuban/Kuta/Legian/Seminyak before you fly home - it's closer to the airport which might be helpful if you have a late flight with a child, and, depsite the knockers, it's worth a look around anyway. And that way, you will have first hand experience of the place to know where you want to stay (or avoid) the next time (I'm sure there will be one!). Ask here about hotels there that suit you, that will be a bit more 'traveller' rather than 'tourist', yet still be very comfortable. Forumites are very good at helping you narrow down your search.
