i think you will find a lot of the 'bread' in Bali is made from Rice flour, rather than wheat. We actually buy wheat bread and ask for it to be toasted daily at our hotel.
I would be concerned about buying 'gluten free' bread from a place like Breadtalk as you could have at risk of wheat flour easily being in and around the preparation process?????
