Normally prices are set for a fixed period, but unlikely for a year given the current volatility.
I would think that most places will hold and honour a quoted price for three months, but I am sure that anything outside this will be subject to price increases.
You may be able to lock a price in for a fixed period by paying in full at the time of booking, but as I say, all places will be different.
