I have been to Bali many times and am also a coeliac, last time I went in March I found out that most things that are actually made in Bali are made from rice as it so readily available over there (and cheap for them of course). I still checked with the restaurants but I found out that most pancakes, wraps and even a lot of their noodles are all rice based and so gluten free. They even do the rice porridge for breakfast, if he likes that. Unfortunately I cant help with the beer situation so it could just be a stick with cocktails situation. Hope this helps.
