Done a few of those trips you have mentioned but it has been some years so I wont comment about price. However, Ku De Ta is fantastic (in my humble opinion) and yes, for Bali standards it is expensive but if you compare the same quality and location against Australia, for example, its relatively well priced. Very upmarket and cool but not cheap. Not sure that any night is better than others but some nights are busier, usually Saturdays. As a suggestion, go for a drink only in the first instance and see prices of food etc, then you can decide. Glad you are enjoying yourself.
