go to the beach just near the Beach Police post (SATGAS) in Kuta and ask for Made. If he is not there Wayan or Ketut will help you but don't bother with Nyoman because he is just not reliable. Explain to him that you wish to try magic mushies and watch a cockfight but be sure to let him know that you have plenty of money to bet (or buy) and he will take you on a magical mystery tour of Bali.
