MIE GORENG
6 tablespoons vegetable oil, 6 shallots, peeled, halved lengthwise and sliced, 6 cloves garlic, peeled and sliced, 200gms chicken meat - sliced, 200gms medium sized shrimp - peeled, 1/4 small green cabbage - shredded, 1/2cup(125ml) Sambel Tumat(I just use any Sambel), 4 eggs, beaten, 750gms fresh egg noodles, 2 teaspoons salt, 1 tablespoon sliced bir's-eye chilies and 2 tablespoons fried shallots(can buy in jar from Asian groceries).
METHOD
Heat vegetable oil in wok or heavy frying pan until very hot. Add shallots and garlic and fry for 1 minute until golden yellow. Add chicken and shrimp & fry for 1 minute, then add the cabbage and fry for 1 minute. Add Sambel and mix well.
Add eggs and continuously stir for 30 seconds. Increase to very high heat, add noodles and salt(for Nasi Goreng just add 750gms cold cooked rice). Fry for 3 more minutes, stirring continuously. Add chilies, mix well and serve immediately, garnished with fried shallots.
