For us, musts are Pacung Indah Hotel - beautiful, very reasonably priced place with superb food & great views over deep ravines to Mt Agung. Run by an Aussie couple and too much trouble is barely enough. Great drives around the area - Candi Kuning botanical gardens, Bedugul, Munduk etc.
If you haven't been to Ubud then you must - a wide variety of places to stay there. Great shopping and excellent restaurants. Good as a base for a trip to Kintimani & the markets en route etc. Cultural centre of Bali - great art galleries.
In Sanur a day or 2 at Sanur Beach Villas is time well spent - lovely very reasonable rooms with everything. Close to the beach & beachside restaurants. Not to mention the red esky poolside.
Candi Dasa is nice, too.
I'll never go to Bali again without spending at least a week away from the coastal tourist strip. Lots of other places on my list for next trip.
