I use them mostly for cooking - cakes and sweets, that kind of thing.
When you split them open, scrape out the tiny little seeds and use them for flavouring things. Keep the scraped out pods in your sugar container and it gives it a beautiful vanilla scent :)
I bought them from a little shop in the main drag of Sanur - on the right hand side as you head towards the Hyatt, but not as far as the Hyatt - but they're also widely available in markets and supermarkets.
