I quite like the time I have alone in Bali when hubby has gone back to remote places to surf. But I have learned over the years to never ever tell anyone (tourists or locals) that I am staying alone. This is advice a Balinese gave me long ago & I've stuck with it. I just say hubby is surfing (true - but several hundred ks away) & I'm meeting friends for dinner/lunch whatever.
In Ubud do a cooking class. Go to the Art Galleries. Blanco's house is an easy walk, just across the bridge. The shopping there is very different from the coastal tourist strip. Head up to Kintamani stopping at the Tegalalang (spelling?) markets. Eat very well at our fave Tutmak just next to the soccer field, Cafe des Artistes in Jl Bisma, Ibu Oka for an Anthony Bourdain experience, Bumbu Bali next door etc etc.
