I've been to Bali 3 times, but am a made keen Bali enthusiast.
1) Horse riding with Island Horse at Yeh Gangga Beach. SOOOO amazing. Ride along the beach, through village, through river, jungle. See some amazing views and sights. I'd never ridden a horse before but the guides were very helpful. Probably one of the greatest things I've done in Bali. www.baliislandhorse.com About US$50
2)Bread Talk- awesome awesome bakery in Centro Discovery Mall, Kuta!
3) White water Rafting with Bali Adventure Tours. Just a great adventure, and beautiful buffet lunch with an intense view. Not scary, just lots of fun. www.baliadventuretours.com
4) Cooking class- Although I haven't done one, I'm really excited about trying one. Going to markets early morning then making some traditional Indo food. Yum. Read other posts to find out about which company.
5) The monkeys!! Monkey Forest at Ubud, which you've probably done, but they never get boring. There's also another place to see Monkeys and flying bats around a temple an markets- Alas Kedaton in Tabanan.
6) Camel Safari at Nusa Dua (which i haven't done but sounds fun).
7) Bali Buggy Rides. Just the location was amazing!!! www.balibuggy.com
8) More water adventures. Bali canyon tubing, white water kayaking, parasailing, jet skis, snorkelling, kite surfing, surf lessons etc etc
9) Safari Park- also have't been here, but every review I've read is positive. Sounds like a must go.
10) Meeting and helping the locals and truly experiencing Bali. I always take clothes to give to charities or enviro bags to give to the market ladies. Or just try and speak a few words of Bahasa, and getting away from the touristy areas for bit and seeing traditional life.
There's so much more I could suggest!
