Assuming you would like 3 plus not 5 star in
Sanur
Besakih, Gazebo, Griya Santrian, all beachfront in central Sanur which is the ideal area to stay. Vila Shanti is 3 star but still beachfront.
I think its better to start at Sanur, to ease yourself into Bali, rahter than finish there.
Ubud
Tegal Sari or Greenfields, similar location overlooking flat rice paddies, superb!
Ubud village Hotel is more central but good standard, not a patch on Tegal Sari though (in my opinion)
Excellent idea to spend some time in different locations in Bali, as each location is vastly different and have loads to offer.
We too used to spend all of our holiday in one place and day trip, but these days we always head out of Legian for a few days.
