If you are looking for the sort of thing like happens in KL or BK, where a whole market set up is assembled at night, that isn't how it happens in Bali.
The markets are more stable, and operate from around 9 - 10 am till when business dies down, maybe around 10pm.
There are however morning markets, starting early (say 6am) catering to the local communities, and these can be very interesting to have a wander around.
Central Denpasar has a great one, and there are a couple of largish ones in Kuta and Legian.
