I have done so on a number of occasions with no issues, but always fax the information do not send it via e-mail as unless you stuff up the fax number it can't be intercepted and stored like e-mail can.
To be ultra cautious you can fax each seperately just to break up the information, but I don't see a need to do that when faxing.
What you also need to understand is that no matter what method you actually use to pay (ie fax or in person) if the other person at the other end of the transaction wants to do something with your details they are going to do so.
I also was quoted a number of years ago statistics that showed a large part of CC fraud actually comes from within the actual financial institute itself in certain countries and their is no way you are going to avoid that.
