Personally I would stop for a night at Pacung on the way up as you can explore Jatiluwih easily from there. I would go either by the main road or, preferably the one to the east of it through Sangeh (monkey forest) and turn left at Petang to the main road. This road has less traffic than the main one and is a lot more interesting, going through small villages. Pacung Indah is a great place to base youselves to see Jatiluwih and the temple At Batukau, the rice paddies here are some of the best in Bali, lunch or just a drink at Cafe Jatiluwih has a great view. You could then go to Lovina via Candi Kuning markets and Crackers bar, Lake Bratan and the beautiful water temple there. A look at the Ghost Palace is interesting too, just ask David at Pacung Indah for directions. At Lovina we have stayed at Rini which is very clean and pleasant, but Rambutan Cottages also get good reviews. We did a great day trip from Lovina to Git Git waterfall, around lakes Buyan and Tamblingan, lunch at Ngiring Ngewedang restaurant and back via Serririt and the Hot Springs at Banjar . On the way back to Sanur I agree with Gecko, the Pupuan road has great views back to the sea , then fantastic rice paddy views and Tanah Lot would finish it of brilliantly. If you want more time in Lovina you could go there via Munduk and down by one of the lesser roads past Asah Gobleg, very scenic, very winding, very steep.
