I did a big loop last time from Ubud to Pura Batukaru and Jatiluwih. The trip is easy to do in a day and the sites and just brilliant. A good lunch of mixed rice was about 6,000rp... amazing flavours... The only problem is finding your way there. I had pre-programmed my gps before I got there to tell us which way to go, but I'm sure that with a map you would have some success.

Otherwise, there are plenty of other loops to the north of Ubud through small villages and rice fields that are easy to get onto randomly. No planning necessary. Locals will point if you don't know how to get back to Ubud. All in all, hiring a bike in Ubud for touring out-rates car and driver by several orders of magnitude.

The only issue is that of injury should you fall off (unlikely) and insurance. The roads are not busy. Not even slightly.

Click the link for an overhead view of the ricefields at Jatiluwih. There are even better ones than these close by, in my view. Just explore.
