Should we rent a villa? Where to stay?

Man and I are planning trip to Bali Dec 21- Jan 5 - just the 2 of us. We want to do much SCUBA, sit on beach, get massages, meet people, eat well and he wants some golf.It is important to us to be on or short walk to beach. I would love a pool as I enjoy floating and lap swimming without tots jumping around me. We are outgoing so do not want to be secluded but near place to make new friends, we love to cook, drink and entertain. He is a gourmet chef, we are wine connoisseurs and professional diners so very interested into taking some Balinese cooking classes also.
I would like to visit arts area and buy some crafts to ship home. Also to enjoy local festivals and temple activities.
We are reading up on Bali but would love suggestions on which area to stay in. Is setting up one base a good idea or should we divide our time in two areas? How much time to travel around the island? Any must sees or must do's? Wondering if the villas with their included cooks, drivers etc are as good or better deal than the resorts? I like the idea of the villa staff but do not want them underfoot and intruding on "intimacy". Appreciate any suggestions on massage and spa tx as well.
