You could have a lesson in playing gamelan instruments, painting, kite making, Balinese dancing or making temple offerings if any of these appeal.
You could take a guided walk through Ubud or through the rice fields & learn about their crops, temples, housing, etc.
If you feel more adventurous, you could do white water rafting, jungle trekking or elephant riding - all not far from Ubud.
If you want to see the nearby sights, you could visit Goa Gajah (the Elephant Cave), Gunung Kawi (Royal Shrine Monuments) or Tirta Empul (Water Temple) - all an easy drive from Ubud. The monkey forest is well worth a visit too and within walking distance of the main township.
Another option is to treat yourselves to a massage & spa treatment. There are quite a few in Ubud.
