As you are obviously seasoned travellers you will have no problem travelling in Bali. You definitely don't need to do a tour or even have a full time guide or driver. Perhaps just get a driver to take you to where you want to go (most of them will be able to suggest accommodation etc) move around locally by yourslef or using the local people then get the driver to come and take you to the next stay. Our favourite areas are the mountain roads between Ubud and Singaraja and you can stay along the way. I agree with Filo about architecture. Also when you stay in Ubud the palaces are fascinating as well as various private houses and art galleries.
