don't worry about things too much- there are plenty of nappies to buy over there but as the others said, maybe take your own from home for the nights as you don't need to bring them home with you so the weight isn't too important.
We took our kids 2 years ago when the youngest was 6 months old and oldest was 3yrs old and it was no worries at all to buy supplies over there.
We are taking them again this year and she will be 2.5 years old (and still in nappies *cringe* LOL). The Balinese love kids and I always felt safe with my kids. Just teach them big time on traffic and safety around pools and you'll be fine. Be aware that most drivers don't have kids car seats (but all cars should at least have front seat belts now) so maybe consider buying a cheap polystyrene booster seat to take with you if you are thinking of driving anywhere. Maybe leave it there with a driver to help them out? (we did that with our Baby Capsule)
There is plenty to do and see for kids and the food appeals to kids too. Maybe consider going for a trip to the monkey forest as the kids love it. I know it isn't that PC but the kids loved the Zoo too.
There are little shops called Circle K's everywhere now where you can get the basic supplies and there are supermarkets through out Kuta too for bigger food shops.
Make sure you take some hand Sanatiser which can just be rubbed into the hands instead having to wash them- this will keep hands germ free and give you peace of mind.... ok one last thing while I'm here LOL- make sure you are prepared with Mozzi repellent that is suitable for kids too and plenty of sunblock.... and ENJOY!!! we went without the kids last year and regretted every second as we know how much they enjoy it- the little things like a squirrel playing in a palm tree outside our hotel room :-)
