Helicopter Flights. I'm not sure if these are still going as there were stories of a helicopter falling off a roof in Java a year or so back - but given all things Bali that might or might not be true or might or might not be anything to worry about, just get off before it lands if there is a handy building.
Bali Adventure Tours US$45 (min 3 people) for Kuta Beach flight. US$330 for flight along the beaches - max 4 people. Uluwatu temple US$605 for 4. bahamabali@yahoo.com. Make sure you've got good weather. Can't see a damn thing if it's cloudy.
Also Air Bali, helicopter and seaplane tours . http://www.airbali.com/ .
Not cheap but the sights are out of this world. Have a look for the coffee table book, Bali From the Air, R Ian Lloyd and Joseph Yogerst. ISBN 981 00 5332 0.

Air Bali also has helicopter tours available. There is a southern circuit (about 1 hour) and a mountain loop (about 1.5 hours). Their office is at Dewa Runci Building, Jl By Pass Ngurah Rai 100X, Kuta Bali Indonesia. Ph 767 466 or 766 582. Fax 766 581. E-mail airbali@dps.centrin.net.id.
