As a rule of thumb, when growing from seed, look at the map of Australia on the packet and follow the instructions for the NT. The climate and seasons are close enough.
The soil will depend on where they are - but pretty much everywhere the soil is rich but can be dry and need preparation first.
We've had success growing corn, cabbage, tomatoes, beans, watermelon and various herbs in Lombok. I'm sure lots of other things would be fine too.
