When I was in Bali in June-July this year, ESC was just being established, for those that don't know about it, it's a new restaurant adjacent to the old Paddys site, which is now a car park.
The food is exceptional, the staff sensational, and I was lucky enough to be included in taste testing before the menu was expanded. I fell in love with the Jack Daniels baguettes, along with so many other dishes. I spoke a bit with Sean, (god I hope that's his name, my memory is bad) he was from Canada, and was running the show, very friendly guy, and most accomodating.
