I have done the Bali Bintang tour on several occasions and it is mostly down hill but there are a few up hill parts. I personally think your children are to young for these tours. I run some villas in Bali and most of the biking trips are the same. I think you will have to do this one by yourselves and take the children to waterboom park instead. I feel that even if you did have bike seats it would be rather dangerous and make it tough going.
