Can't recommend anywhere in Bali (do a new post & ask for info perhaps) but, as a bit of a foodie, I just love going the the morning markets on Wed & Sun in Kuta, Lombok. It's an absolute treat - wonderful chatting with the vendors squatting on the ground selling fresh spices & condiments that I'd only ever seen in bottles & packets here. Tumeric & other things straight out of the ground or off the tree - the aromas & flavours so heady and they enjoyed my interest & happily let me taste anything. The tamarind was beyond words. A chef would love a traditional food market, no question.
Just recalled that there is a market at Candi Kuning in Bali near Cracker's Bar & Loos - haven't been there but others on here have & it sounds great (as does Cracker's place with THE best loos in Bali, no question, it seems, & David's & Moira's Pacung Indah restaurant & hotel nearby - they're on my list for next trip altho it's hard to lure my surfer hubby away from the coast).
Also, we got to the Jimbaran fish markets at around 10am & it was bustling then. Someone said in response to my JBR that it's open until well into the night.
I very hope that your friend will post a JBR on his return - I'd greatly enjoy reading the comments of a chef's food experiences in Bali.
