holidays question?

Just wondering how late I could leave it to book for September school holidays ex Brisbane? I want to book but there are no good specials at the moment and it's quite expensive! I was thinking of leaving it and seeing if any good deals come out in July. Is this likely to happen or do school holidays book out quickly?
