Hi David,
Personally, as someome who has been through the whole process I would not get married in Bali with out the help of an Indonesian based wedding planner. Also don't forget you don't just need a celebrant but a government registar to be present and preform at the ceremony!
While it may cost somewhere between $500 to $1,000 for them to do everything it was the best money we spent as we had 32 guests from Australia for the day and I was not going to have close family & friends sacrifice time out of their busy lives and money that may have been budgeted elsewhere to go all that way only for the thing to fall over becuase of an issue with the long distance organising.
We used Bali Weddings International and they were very comfortable with the fact that we used them for the legals only and basically organised the rest ourselves. No pressure to do anything more with them and they were also happy for us to pick and choose what extra we needed from their service.
Goodluck and have a wonderful wedding/holiday, it may seem duanting at first but it was the best thing we ever did.
