Food poisoning has many different causes, and each has different timing as to when symptoms appear. Salmonella is one, and the usual onset of symptoms is 12-72 hours after exposure. It could be quicker, could be slower. E-coli is another very common cause of food poisoning, and it takes 24 hours or more to give you symptoms. There are some types of food borne illnesses that give symptoms almost immediately, Staphylococcus is one that has symptoms come at between 2 and 6 hours after eating contaminated food. That's probably what you had...or if you had a culture and it was salmonella, it was likely something other than what you ate at the bbq.
