The bali part of your itinerary sounds great. I havnt been to Lombok yet, so will leave others to comment on that part.
Amed is my favourite place in Bali. Blue moon Villas my favourite place to stay. Stunning views, hard to beat. They have good food in their restaurant. Other good restaurants are at Apa Kabar Villa, Restaurant Gede and Baliku resort. Enjoy your trip
