Have been to both places four times each, they are just worlds apart.
Fiji really consists of 'self contained' resorts if that is your thing. There are limited dining opportunities other than your resort. The islands are just beautiful, you can go island hopping to see different islands, but basically they are just different configurations of the same thing. Snorkelling is fabulous. If you like shopping, forget it. If you like comercial development, the only bit of this you will see is in the resorts. You wont find a 'Ubud' experience there. The Blue Lagoon Cruise when we were just a couple (5 days) was just brilliant - probably our best ever holiday experience!
Bali, well, you have been to Bali so you know what that offers.
Please ask if you need any more details - have stayed at Mana Island (twice) Musket Cove (once) Sheraton (once) Coral Coast hyatt (once) and Blue Lagoon Cruise. And Bali five times. And again in July.
