We went to Bali with another couple for Christmas, New Year, and to celebrate a 50th birthday. Collectively, we took eighteen bottles of Australian wine and French Champagne into Bali with us, and declared every bottle.
When we went through the red Customs line, only one (out of five) suitcase was opened for inspection, then the two males in our travelling party were taken to the "Duty Assessment" room, where a quick calculation determined that we had 9.5 litres more alcohol than was allowed for four adults, and were were asked to pay AU$200, which we quickly forked over, figuring the price was well worth it, considering what you're charged for wine once in Bali (though we were quite pleasantly surprised with the selection available and the relatively low prices compared to Singapore, Thailand, or Hong Kong).
To be honest, we could probably have taken three bottles per person through the Green line in our hand baggage without declaring anything, and gotten away with it, but we prefered to "do the right thing", and are glad that we did.
At the end of the day, it's your call, so only do what you feel comfortable with.
