Deportation when (not if) you get caught (Balinese jealous of you taking one of their jobs will likely inform authorities), can't come back for 7 years at least. Possibly a bit of jail time while they are thinking about what to do with you.
If you've been there on holidays, I'm sure you have noticed that there are not a whole lot of Westerners working in Bali, and none in casual positions. As AngieC said, if you want to live there, you need to have a business, and even that is not easy to do, costly, and many many people have lost everything for that dream.
You can't even work, not even voluntarily, if you are married to a local with a permanent stay visa.
Forget the working holiday - just have the holiday bit.
